Keeping Calm in Times of Calamity

More often recently I think to myself, “What day is it? Wait, what month is it for that matter.” You do not need for me to remind you these are not normal times because there is nothing “normal” about not being able to hug the people we love. I don’t want to say we are “suffering” because there are people all around us who are truly suffering with COVID 19 and other illnesses, and many families are stressed in the face of enormous economic uncertainly. But things do suck; for lack of a better word.

In past articles I addressed the importance of maintaining a diverse workforce during layoff and re-hiring periods. This month I’m going to talk a bit about the risks associated with melting down under the weight of all this stress, particularly in a work environment. In short, try to avoid it.

Understand that many of your co-workers and employees are, like you, also under an enormous amount of stress. Losing your temper at work, or worse, losing your temper with an employee not only could damage your reputation, but it may also wreck your career. When you get wound-up, acknowledge your emotions and stop struggling with yourself. Attempt to step back. It’s useful to simply say, “I’m upset right now, and need a minute.” Take a 10 minute break. Breathe. Then step away to remove yourself from the stressful situation. Now, away from the stressor, take an exaggerated breath or observe each breath and listen to yourself breathe. Focus. If you find that your mind wanders, distracted by thoughts, notice what is happening and gently bring your attention back to your breath. Give yourself time.

Grasp that you cannot control what is happening around you. This virus is horrible, and you cannot do anything about that. The economic collapse is scary, and you cannot do anything about that either. And Americans coming to terms with our racist past is real. You don’t have to throw yourself in front of every crisis.

In a work environment, trust other people to do their part, and accept that they may do things differently than you do. The sooner you let go of what you can’t control, the sooner you can move forward, and get focused again. Because life will return to how it was. California labor laws will remain on the books, and employers must continue to figure out how to deal with these issues while balancing all the fear and emotions associated with these uncertain times.

Villegas-Carrera Tips – How to Manage Your Time Better

Prioritize your work, and do the most important things first.

Have a realistic plan for your day. Don’t just work on impulse and don’t try to do more than you can handle.
Know what your distractions are, and take steps to control them. For example, put your phone is a desk drawer.
Start early, and keep on going, even when you feel discouraged or fed up.
Know what’s irrelevant, and don’t waste your time on unproductive or pointless tasks.
Switch between focused work and lots of short breaks.
Be flexible if you meet with obstacles, or things don’t turn out the way you had planned.

Karen’s Delicious Peruvian Kitchen

This is a delicious and iconic Peruvian dish served at the best Peruvian restaurants and home kitchens. My dear mom used to make this dish for my sister and me. Once, I went to the butcher shop and asked for thinly sliced filet mignon to make this dish, and a lady exclaimed, “Why on earth would you slice filet mignon!” To which I replied, “Because I’m making Peruvian Lomo Saltado, of course.” She had no clue. But you have to use a meat that is delicious and tender for this special dish.

Lomo Saltado

Ingredients:
2 lbs filet mignon or top sirloin
3 russet potatoes unpeeled
1 medium red onion
1 chile amarillo (Peruvian yellow pepper) or 1 jalapeno pepper
3 garlic gloves
1 bunch green onions
1 tsp fresh ginger
3 medium tomatoes
1 bunch cilantro
1 entire container of peanut oil
4 tbsp. canola oil but replenish as needed to fry all ingredients separately
4 tbsp. apple cider vinegar
4 tbsp. soy sauce
2 cups long grain white rice

Directions:

French fry recipe:
3 russet potatoes, unpeeled ;
Cut the potatoes into French fry slices, your preference regarding how thick or thin you want them;
Heat peanut oil to medium high then to high heat;
Grab a handful and cook until they start to brown;
Remove from the oil and place on paper-towels to drain the oil;
Drop the next handful of potatoes slices until all are cooked;
After all the fries are cooked, fry them it again so they become extra crispy;
Salt to taste.

Cooking the meat & vegetables – This part is very tricky because after you slice all the ingredients separately, you have to toss the ingredients very quickly and prevent them from overcooking and becoming limp.

Slice filet mignon or top sirloin into thin slices; set aside and place in a bowl;
Slice onions, green onions and tomatoes into thin slices, same size and length, and place in separate small bowls;
Chop garlic, peppers and ginger into tiny pieces and place in separate tiny bowls;
Chop ½ cup cilantro and place in a small bowl;
In a large wok, heat canola oil until wok is smoking and add meat tossing quickly for about 5-10 minutes; quickly remove from heat and place in a bowl;
Heat canola oil again and do the same for the red and green onions and toss; then add and toss tomatoes, garlic and ginger; toss quickly for a 2-3 minutes;
Toss in the cooked meat, and add apple cider vinegar, soy sauce and chile; toss until all flavors are mixed in; do not overcook;
Add French fries, and serve with white rice;
Eat immediately while it’s hot.
